My mom always makes this for Thanksgiving and all of my siblings have carried on the tradition. The secret is in the topping.
Ingredients
- cherry-flavored gelatin (such as JELL-O®): 1 pack (6 ounce pack)
- hot water: 2 cups
- pineapple, juice drained and reserved: 1 can (8 ounce can, crushed)
- bananas: 3 piece (sliced)
- ½ cups cold water: 1 piece
- miniature marshmallows: 1 cup (or as needed)
- white sugar: 0.75 cup
- all-purpose flour: 2 Tbsp
- egg: 1 piece
- cream cheese: 1 pack (8 ounce pack, softened)
- frozen whipped topping: 1 container (8 ounce container, thawed)

Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.

Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes. Mix cream cheese into sauce, transfer to a large bowl, and cool to room temperature. Stir whipped topping into cream cheese mixture. Spread over gelatin. Chill thoroughly before serving.
