This fluffy mustard mashed potato recipe is something I created after tasting a similar potato dish in an Irish restaurant. They also go great with German pork dishes. You can alter the amount of mustard to your taste.

Ingredients

  • red potatoes, scrubbed and: 5 piece (halved)
  • milk: 0.25 cup
  • butter: 2 Tbsp
  • salt and pepper: (to taste)
  • whole grain mustard: 0.25 cup

  1. Place potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash potatoes in a large bowl with milk and butter. Season with salt and pepper.

  2. Whip potatoes using an electric mixer set on medium until smooth, 3 to 4 minutes, adding more milk if potatoes are too dry. Beat in whole grain mustard and serve immediately.
