The recipe of vegan oat, potato and carrot patties is so simple that you will learn it in just a few minutes. The dish is easy to cook and includes three major ingredients. It can be served for dinner or supper and is a perfect choice for people, who take care of their health.
Ingredients
- rolled oats: 1 cup (gluten-free)
- potato: 700 g
- carrots: 1 piece (medium)
- salt: 1.5 tsp
- black pepper: 0.5 tsp
- coriander seeds: 1 tsp
- asafoetida: 0.3 tsp (or 1 tsp of garlic powder)
- vegetable oil: 5 Tbsp

Take a deep bowl and mix 1 cup of rolled oats with 1.5 cups of boiling water. Set the bowl aside for about half an hour until the water cools down.

Meanwhile, peel and cut the potatoes into cubes, put into a pot, pour water, bring to a boil and cook for about 10-15 minutes, or until the vegetable becomes soft.

Wash, peel and fine grate the carrot.

As soon as the potato is ready, drain it and mash well.

Mix mashed potato with oats and grated carrot. Add salt, black pepper and ground coriander. You can also use any other spices or herbs you prefer. If you wish, add asafoetida or garlic powder. Mix the ingredients well one more time.

Wet your hands a bit and form small round patties.

Take a frying pan, heat vegetable oil in it and fry the patties on medium fire for about 5-6 minutes on each side. The patties should become light golden.

Serve warm with stir-fried or fresh vegetables or any other side dish you like. Enjoy!
