Turkey tortilla soup is one of the easiest soups to cook from scratch. You don’t have to buy any special ingredients to cook it! This Mexican dish is very simple, but so delicious! Try cooking it right away and you won’t regret the decision!
Ingredients
- corn tortillas: 6 piece
- canola oil: 4 Tbsp
- onion: 4 cup (chopped)
- garlic: 2 clove (minced)
- chipotle chili in adobo: 1 piece (minced)
- cumin: 1 pinch (ground)
- turkey stock: 6 cup
- tomatoes: 1 can (crushed)
- kosher salt: 0.5 tsp
- turkey meat: 2 cup (shredded and cooked)
- avocado: 1 piece (cut into cubes)
- Monterey Jack cheese: 1 cup (shredded)
- cilantro: 1 bunch (small, fresh and chopped)
- lime: 1 piece (cut into wedges)

Start cooking your soup with frying corn tortillas. Dry them in the pre-heated to 93 C (200 F) oven for about 10 minutes. Then slice your tortillas into wide strips. If some of the strips are too long, cut them in half.

Take a pot and heat oil in it on medium heat. As soon as the oil gets hot, add tortilla strips and fry them until they become light brown. This will take one or two minutes only. Take them from oil and put on paper towels.

Add chopped onions to the pot with the remaining oil.

Cook on medium heat for about 3-4 minutes. Then add garlic, cumin and minced chipotle chili in adobo and cook for 2 more minutes.

Add crushed tomatoes, shredded turkey and salt. You can replace turkey with chicken. Simmer on high heat, then reduce the heat a bit and keep cooking for about 15 minutes.

Prior to serving the dish, divide half of the fried tortilla strips into the serving bowls. Pour soup into them. Dredge with chopped avocado, shredded cheese, the rest of tortilla strips, and cilantro. It is recommended to serve the soup with lime wedges. Enjoy this fantastic dish now!
