An easy chicken casserole with lots of flavor.
Ingredients
- olive oil: 4 tsp
- sour cream: 6 Tbsp
- ounces shredded Cheddar cheese: 4 piece
- sliced mushrooms: 2 cups (fresh)
- salsa: 1 jar (16 ounce jar)
- white rice: 2 cups (cooked)
- ounces boneless chicken breast halves: 8 piece (diced)

In a skillet, heat oil over medium heat. Saute mushrooms.

Combine mushrooms, sour cream, cheese, salsa, rice, and chicken. Place in a greased casserole dish.

Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes.
