A homemade version of crispy potato chips flavored with smoked paprika and sea salt.

Ingredients

  • extra-virgin olive oil: 3 tsp (divided)
  • russet potato: 1 piece (thinly sliced with a mandoline)
  • smoked paprika: 1 tsp
  • salt: 1 tsp

  1. Preheat the oven to 400°F. Line two baking sheets with parchment paper. Brush the parchment paper with about 1 teaspoon of olive oil.

  2. Brush the potato slices with the remaining 2 teaspoons of olive oil, coating each with a very thin layer of oil. Arrange them in a single layer on the baking sheets.

  3. Bake the potatoes for 10 minutes, flip them over, rotate the pans, and bake for another 10 minutes. Some of the chips may cook faster than others, so keep an eye on them and take them off the sheets early if needed.

  4. Once the edges of the chips are crispy, remove the baking sheet from the oven and let the chips cool for 5 minutes. Transfer to a bowl and toss with the paprika and salt to taste.
