I got this recipe for quinoa with pesto from a friend living in Ecuador. Quinoa was a staple of her diet there; it is a great source of protein.
Ingredients
- quinoa: 1 cup (drained)
- chicken broth: 2 cups
- basil pesto: 2 Tbsp
- tomato: 1 piece (diced)
- salt and pepper: (to taste)

Bring quinoa and chicken broth to a boil in a saucepan; cover, reduce heat to low, and simmer until liquid is completely absorbed, about 15 minutes.
