These pickled bell peppers are great plain or even on a sandwich.
Ingredients
- water: 1 cup
- distilled white vinegar: 0.5 cup
- white sugar: 0.33333 cup
- kosher salt: (to taste)
- red bell peppers: 3 piece (halved, to taste)

Combine water, vinegar, sugar, and salt in a saucepan; bring to a boil. Add bell peppers to boiling water mixture. Reduce heat to medium-low and simmer until peppers are softened, 8 to 10 minutes.

Transfer peppers and liquid to glass jars. Screw on the lids and refrigerate for 8 hours to overnight.
