- coconut oil: 2 Tbsp (melted)
- vanilla extract: 0.5 tsp
- pumpkin pie spice: 0.5 tsp
- granulated erythritol: 1 Tbsp
- unsweetened coconut flakes: 2 cups
- salt: 0.125 tsp

Preheat oven to 350°F.

Put coconut oil in a medium microwave-safe bowl and microwave until melted, about 20 seconds. Add vanilla extract, pumpkin pie spice, and granulated erythritol to coconut oil and stir until combined.

Place coconut flakes in a medium bowl, pour coconut oil mixture over them, and toss to coat. Spread out in a single layer on a cookie sheet and sprinkle with salt.
