  • scallions: 3 piece (thinly sliced)
  • carrots: 1 cup (shredded)
  • fresh cilantro: 0.25 cup (chopped)
  • extra-virgin olive oil: 2 Tbsp
  • toasted sesame oil: 1 Tbsp
  • rice vinegar: 3 Tbsp
  • soy sauce: 1 Tbsp
  • fresh ginger: 2 tsp (finely chopped)
  • maple syrup: 1 Tbsp
