Braised cabbage shines in this hearty vegetarian main dish. Fresh apples and apple cider vinegar offer a sweet, tangy taste that beautifully complements the buttery cabbage and creamy white beans.

Ingredients

  • extra-virgin olive oil: 2 Tbsp (none)
  • small head cabbage: 1 piece (shredded)
  • Pink Lady apples: 2 piece (cored and diced)
  • apple cider vinegar: 0.25 cup (none)
  • water: 0.25 cup (none)
  • salt: 0.5 tsp (none)
  • cannellini beans: 1 can (drained and rinsed)

  1. In a large skillet over medium heat, warm the olive oil. Add the cabbage and cook for 3 to 5 minutes, or until slightly tender.
