This salad is too easy to cook. The only thing you need to do is to mix all the necessary ingredients to have this beautiful and tasty salad. It is healthy, by the way. Nice dish to make nice body.
Ingredients
- almond: 3 Tbsp
- green onion: 2 piece
- avocado: 2 piece
- paprika: 2 pinch
- Powdered coriander: 2 pinch
- olive oil: 3 Tbsp
- salt: 1 pinch (per taste)
- lemon: 1 piece (big one)
- quinoa: 1 cup
- apricots: 2 Tbsp (dried)
- raisins: 3 Tbsp

Slice dried apricots. Place apricots and raisins into a bowl and pour in a boiled water. Leave for 5 minutes. Pour off water and set aside.

Rinse quinoa, place it into a pan with 2 cups of water and boil. Cover with a lid, reduce the heat and boil until the water is soaked up and the quinoa is translucent. It is for about 10-15 minutes.

Now stir quinoa with fork and place it on the tray to cool.

Peel avocado, remove its pit and slice. Chop green onions and cut almonds.

Grate lemons peel and squeeze 1 tablespoon of its juice. Whisk lemons peel and juice, olive oil, coriander, paprika, salt.

In a large bowl mix quinoa, green onions, raisins, dried apricots, avocado slices and almonds with the dressing.

You may add some pepper and serve.
