  • water: 2 cups
  • quinoa: 1 cup
  • feta cheese, crumbled: 1 pack (4 ounce pack)
  • cucumber: 1 piece (sliced)
  • roma (plum) tomato: 1 piece (diced)
  • lemon juice: 1 Tbsp
  • cider vinegar: 1 Tbsp
  • olive oil: 1 Tbsp
  • dill weed: 1 tsp (dried)
  • salt: 1 tsp
  • ground black pepper: 1 tsp

  1. Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Refrigerate quinoa in a large bowl until cool, about 30 minutes.
