This beef stroganoff recipe with sour cream is rich and creamy. It uses a roux to create a beef gravy thickened with sour cream and cream cheese. A little bit of zip is added with pepper flakes. Serve over egg noodles.

- beef chuck roast, cut into 1/2-inch thick strips: 2 piece (2 pound)
- red wine: 0.5 cup
- salt: 1 tsp (to taste)
- ground black pepper: 0.5 tsp (to taste)
- extra-virgin olive oil: 1 Tbsp
- butter: 0.5 cup (divided)
- onion: 1 piece (diced)
- garlic: 3 clove (minced)
- mushrooms: 1 cup (sliced)
- all-purpose flour: 0.25 cup
- ⅓ cups beef stock: 1 piece
- Worcestershire sauce: 1 Tbsp
- red pepper flakes: 2 tsp (crushed)
- prepared yellow mustard: 1 tsp
- cream cheese: 1 pack (3 ounce pack, softened)
- sour cream: 0.33333 cup

Heat olive oil in a large skillet over medium heat. Stir in beef; cook and stir until browned, 5 to 7 minutes. Transfer beef to a plate, then drain any remaining grease from the skillet.
