A tahini-based dressing made with sweet roasted carrots and zesty ginger, perfect for grain bowls and roasted vegetables.
Ingredients
- sliced carrots: 2 cup (fresh)
- extra-virgin olive oil: 1 Tbsp
- chopped fresh ginger: 1 Tbsp
- maple syrup: 1 Tbsp
- soy sauce: 1 Tbsp
- tahini: 0.25 cup

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Place the carrots in a single layer on the prepared baking sheet and drizzle with the olive oil. Bake for 25 to 30 minutes, or until tender.

Transfer the carrots to a blender. Add the ginger, maple syrup, soy sauce, and tahini and blend until smooth, using a spatula to push the mixture down the sides of the blender. Add water, 1 tablespoon at a time, to reach the desired consistency.
