A beautiful and simple side salad featuring shaved asparagus and toasted pine nuts, dressed with a light vinaigrette.
Ingredients
- asparagus: 1 pound (trimmed, about 1 bunch)
- pine nuts: 0.25 cup (toasted)
- extra-virgin olive oil: 2 Tbsp
- Dijon mustard: 1 tsp
- freshly squeezed lemon juice: 1 Tbsp
- Salt: 0 g (to taste)
- Freshly ground black pepper: 0 g (to taste)

Lay the asparagus flat on a cutting board. Hold a spear down with one hand while you use your other hand to make long shavings with a vegetable peeler (or knife). Add small uneven pieces to the salad. Place the shaved asparagus in a bowl.

In a skillet over medium heat, toast the pine nuts, stirring frequently, for 2 to 3 minutes, or until fragrant. Add the pine nuts to the asparagus.

In a small bowl, whisk together the olive oil, mustard, and lemon juice. Season with salt and pepper to taste.

Add the dressing to the salad and toss to combine. Taste and season with more salt and pepper if desired.
