This slow cooker lentil soup is great to come home to at the end of the day. It features a richly spiced broth filled with lentils, ham, and veggies. Pair it with cornmeal muffins, and you have a great meal!
Ingredients
- ½ cups diced cooked ham: 1 piece
- lentils: 1 cup (dried)
- celery: 1 cup (chopped)
- carrots: 1 cup (chopped)
- onion: 1 cup (chopped)
- garlic: 2 clove (minced)
- basil: 0.5 tsp (dried)
- oregano: 0.5 tsp (dried)
- thyme: 0.25 tsp (dried)
- black pepper: 0.25 tsp
- bay leaf: 1 piece
- ounces chicken broth: 32 piece
- water: 1 cup
- tomato sauce: 8 tsp

Combine ham, lentils, celery, carrots, onion, and garlic in a 3 1/2-quart or larger slow cooker. Season with basil, oregano, thyme, pepper, and bay leaf. Stir in chicken broth, water, and tomato sauce.
