Stages of cooking
-
Take a deep pot. Pour water inside, add salt and bring it to a boil. While the water starts boiling, take a sauté pan and heat olive oil in it on medium fire. Fry the bacon (or pancetta) until it becomes crispy.
-
Then add garlic (this is an optional ingredient) and keep cooking for one more minute. Turn off the heat afterwards and put the ingredients into a bowl.
-
Take another bowl (preferably, small) and mix the eggs with half of the cheese in it. As soon as the water starts boiling, add dry pasta and cook uncovered until it become al dente. Remove your pasta from the pot and mix it with garlic and bacon in the bowl. Carefully, mix the ingredients. Reserve some pasta water. Now, it is high time to add the beaten eggs and cheese to the pasta.
-
Season with salt and mix carefully once again. Add the reserved pasta water to prevent the dish from drying.
-
Serve hot or warm with the rest of cheese and freshly ground black pepper. You can also sprinkle the dish with chopped parsley if you like. Enjoy!
