This sausage and rice casserole is spicy, loaded with tomatoes, and easy to make.

- ounces fresh, ground spicy pork sausage: 28 piece
- uncooked long-grain rice: 1 cup
- slice onion: 1 piece (diced)
- garlic: 3 clove (minced)
- green bell pepper: 1 piece (chopped)
- red bell pepper: 1 piece (chopped)
- whole peeled tomatoes: 1 can (28 ounce can, crushed)
- chicken broth: 1 cup
- salt: 1 tsp
- ground black pepper: 1 tsp
- cayenne pepper: 1 tsp

Preheat the oven to 350 degrees F (175 degrees C).

Brown sausage in a skillet over medium-high heat; drain grease. Add rice, onion, garlic, and peppers; cook and stir for 5 minutes. Stir in tomatoes, chicken broth, salt, pepper, and cayenne pepper. Transfer into a 9x13-inch baking dish.
