Pour some water into a small saucepan and set on moderate heat. Heat the water and put a bowl of yolks on top so that the bottom of the bowl does not come into contact with water in a saucepan. On the water bath, stir the yolks actively and continuously for 1.5-2 minutes so that the mass turns out to be slightly white. Stir actively so that the yolks do not coagulate. Set aside.
