 
A quick and simple strawberry pie filling recipe to turn freshly picked strawberries into a decadent filling. Use to make pies, top cheesecakes, or just simply serve over ice cream.
                    Ingredients
- strawberries: 1 cup (mashed)
- water: 0.75 cup (if needed)
- white sugar: 0.75 cup
- cornstarch: 3 Tbsp
- lemon juice: 1 Tbsp
- salt: 0.25 tsp
- strawberries: 4 cups (sliced)

Stages of cooking

                                        Combine mashed strawberries and water in a saucepan; bring to a boil and simmer for about 3 minutes. 
- 
                                        Strain juice from cooked strawberries and add enough water to make 1 cup of juice. Discard pulp. 
- 
                                        Combine sugar, cornstarch, lemon juice, and salt in a saucepan; stir strawberry juice into the sugar mixture. Bring to a boil, stirring constantly, until clear and thick, 3 to 5 minutes. Remove from heat and cool slightly. 
- 
                                        Stir sliced strawberries into the strawberry sauce.
