Stages of cooking
-
If you use canned sweet potatoes, you don’t have to cook them, because they are already cooked. Just do not forget to drain them before cooking. If you prefer cooking the product on your own, then start with scrubbing and baking the vegetable. Pike them with a knife and bake with the skins at 180 degrees for about 1 hour
-
Cut the baked sweet potatoes into two halves and scoop out the potato from each half. Now, you can mix the sweet potato with other ingredients
-
Drain the syrup from the mandarin oranges, rinse them with cool water and dry with paper towels
-
Put sweet potatoes (either canned or baked) into a large bowl, add 3 tablespoons of melted butter, 2 tablespoons of rum (optional), 3 tablespoons of brown sugar, pepper and salt
-
Mash the ingredients together
-
Add mandarin oranges, but be very careful to prevent them from losing their original shape. Spoon the sweet potato layer into a special casserole dish or a deep round baking form
-
Now, let’s cook pecan topping. Mix chopped pecans, 1 tablespoon of melted butter and 1 tablespoon of brown sugar. Spoon the topping onto the layer of sweet potatoes
-
Bake in the pre-heated to 170 degrees oven for about 30 minutes. Wait until the dish cools down a bit, but serve it warm. Enjoy!
