- water: 2 cups
- sweet potatoes: 2 piece (peeled and chopped)
- all-purpose flour or gluten-free flour: 1 cup
- cornstarch: 0.25 cup
- flaxseed meal: 2 Tbsp
- salt: 0.5 tsp

Preheat the oven to 425°F. Line a baking sheet with parchment paper.

In a medium saucepan, bring the water to a boil over high heat. Add the sweet potatoes to the boiling water and cook for 15 minutes, or until the potatoes are soft.

Drain and let cool, then transfer to a bowl and mash.

Measure out 2 cups of the mashed sweet potato and transfer it to a large bowl (save any extra for another use). Add the flour, cornstarch, flaxseed meal, and salt. Mix well.

Transfer the dough to the center of the prepared baking sheet. Using another piece of parchment paper, press down on the dough gently with your hands to flatten it into an even circle. Peel off the top sheet of parchment paper and bake for 20 minutes.
