Refreshing light summer salad.
Ingredients
- cucumbers: 2 piece (halved lengthwise, sliced)
- red wine vinegar: 0.33333 cup
- white sugar: 1 Tbsp
- salt: 1 tsp
- tomatoes, seeded and: 3 piece (chopped)
- red onion: 0.66667 cup (coarsely chopped)
- fresh mint leaves: 0.5 cup (chopped)
- olive oil: 3 Tbsp
- salt and pepper: (to taste)

In a large bowl, toss together the cucumbers, vinegar, sugar and salt. Let stand at room temperature for an hour, stirring occasionally.

Add tomatoes, onion, mint and oil to cucumbers and toss to blend. Season to taste with salt and pepper.
