Ingredients
- flour: 1.5 cup
- butter: 11 Tbsp (cold)
- salt: 0.5 tsp
- milk: 50 ml (cold)
- yolk: 1 piece
- tomatoes: 1.5 kg
- garlic: 3 clove
- rosemary: 1 tsp (dried)
- basil: 1 tsp
- onion: 1 piece (chopped)
- olive oil: 50 ml

Mix flour, salt and chopped butter in a bowl. Take another bowl and mix egg and milk in it as well. Add the liquid mixture to the flour and knead the dough. Wrap it into kitchen film and put it into the fridge for about 20 minutes. Then wash the tomatoes and core them. Then cut them into halves, lay the baking pan with baking paper (or just oil it) and put tomatoes above.

Bake for about 20 minutes and take the skins off them.

Pour olive oil into a pan and heat it well. Add onion, garlic and herbs. Fry until the onion becomes soft and transparent.

Add tomatoes with the juice and mash them to get tomato puree.

Simmer tomato puree to get the paste. You can further blend the paste in a food processor or leave it as it is.

Roll out the dough and put it in the tart forms. Bake in the oven at 220 C (425 F) for about 20 minutes until the tarts get light golden. As soon as the tartlets are ready, let them cool down and fill them with tomato paste. Serve your tomato tartlets and enjoy their taste!
