Tzimmes is a root vegetable side dish that's served on Jewish holidays and get-togethers. This recipe is made with carrots, golden raisins, orange juice, and honey. The carrots are sliced into coins as a symbol of prosperity and good luck on Rosh Hashana.
Ingredients
- canola oil: 1 Tbsp
- ½ pounds carrots, peeled and cut into 1/4-inch rounds: 1 piece
- seedless golden raisins: 0.33333 cup
- orange juice: 0.25 cup (freshly squeezed)
- ½ tablespoons honey: 1 piece
- ½ tablespoons brown sugar: 1 piece
- kosher salt and ground black pepper: (to taste)
- fresh parsley: 2 Tbsp (minced)
