A warming, comforting dish, this Vegan Broccoli Soup is a healthy option that's packed with nutrients. Rich and creamy, yet dairy-free, it's perfect for a cozy dinner.
                    Ingredients
- onion: 1 piece
- garlic: 3 clove
- olive oil: 2 Tbsp
- head broccoli: 1 piece (chopped)
- vegetable broth: 4 cups
- salt and pepper: (to taste)
- nutritional yeast: 0.5 cup
- turmeric: 1 tsp

Stages of cooking

                                        In a large pot, sauté the onion and garlic in olive oil until softened, about 5 minutes.  
- 
                                        Add the chopped broccoli, vegetable broth, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer. Cover and let cook for 10-15 minutes, until broccoli is tender.

                                        Stir in the nutritional yeast, turmeric, and lemon juice.  
- 
                                        Use an immersion blender to puree the soup until smooth, or carefully transfer to a regular blender and puree in batches.
