A hearty, delicious soup packed with healthy ingredients like lentils, vegetables and herbs and spices for added flavor. This vegan lentil soup is perfect for a cozy family dinner on a cold night.
Ingredients
- lentils: 1 cup
- carrots: 2 piece
- celery stalks: 2 piece
- onion: 1 piece
- garlic: 2 clove
- oregano: 1 tsp
- rosemary: 1 tsp
- salt and pepper: (to taste)
- vegetable broth: 4 cups

Rinse the lentils under cold water and set aside.

Chop the carrots, celery, and onion into small pieces.

In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery and cook until they begin to soften.

Add the garlic, oregano and rosemary and stir for about 1 minute.

Add the lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes until the lentils are tender.

Season with salt and pepper to taste.
