You can eat sunchokes or Jerusalem artichokes raw and you don't even need to peel them. Just make sure you wash them well and then slice them really thinly, ideally with a mandoline.

- ½ cups thinly sliced sunchokes: 1 piece
- ¾ cups thinly sliced peeled apples: 1 piece
- olive oil: 0.5 cup
- orange juice: 0.25 cup
- salt and freshly ground black pepper: (to taste)
- pinches white sugar: 2 piece
