InternationalWatermelon Feta Salad is a healthy and cooling Mediterranean summertime salad. It is made by tossing chilled and juicy watermelon cubes, onions, feta cheese and mint leaves in a zesty dressing.
The combination of salty feta cheese with sweet watermelons imparts a unique flavor to this salad. The addition of onions gives it a distinctive bite. Seasoning the salad with refreshing mint leaves, tangy lemon juice, vinegar, olive oil, salt and pepper make it irresistibly refreshing during the hot summers.
You can substitute feta cheese with any goat cheese. If you cannot find it you can use paneer instead or skip adding the cheese altogether.
Ingredients
- watermelon: 6 cup (cubed)
- cube of feta cheese: 2 inch (shredded)
- onion: 0.5 piece (thinly sliced)
- mint leaves: 0.5 cup (finely chopped)
- lemon juice: 1 Tbsp
- vinegar: 2 tsp
- olive oil: 2 tsp
- kala namak: 1 tsp (rock salt or kosher salt)
- black pepper powder: 0.5 tsp

Dice a watermelon into ~1 inch cubes in a large mixing bowl. For best results use a chilled watermelon.

Thinly slice 1/2 of a small onion and add it to the bowl.

Shave roughly a 2 inch cube of feta cheese using the side of the grater with the thinnest holes. You can substitute it with paneer or skip it altogether if feta is not available to you.

Add 1/2 a cup coarsely chopped mint leaves.

Now for the dressing, add 1 tablespoon Lemon Juice, 2 teaspoons Vinegar, 2 teaspoons Olive Oil, 1/2 teaspoon Black Pepper Powder and 1 teaspoon Rock Salt, or according to your taste.

Lightly toss all the ingredients together. Watermelon Feta Salad is ready. Serve it chilled.
