This recipe for zucchini bars is a Brempong family favorite!
Ingredients
- ⅓ cups packed brown sugar: 1 piece
- butter: 0.5 cup (softened)
- eggs: 2 piece
- vanilla extract: 1 tsp
- all-purpose flour: 2 cups
- baking soda: 2 tsp
- ground cinnamon: 1 tsp
- ground cloves: 0.5 tsp
- zucchini: 2 cups (shredded)
- walnuts: 1 cup (chopped)
- cream cheese frosting: 1 pack (16 ounce pack)
- ground cloves: 0.25 tsp

Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan.

Make the zucchini bars: Mix brown sugar, butter, eggs, and vanilla extract together in a bowl. Stir in flour, baking soda, cinnamon, and cloves. Mix in zucchini and walnuts. Spread batter into the prepared baking pan.

Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Allow to cool completely before frosting, about 1 hour.

Mix frosting with ground cloves in a bowl. Spread over zucchini bars and cut into 16 squares.
