Butternut squash soup with lobster… Does the name of this dish sound intriguing? It definitely does! The taste and aroma of it, however, are even more remarkable! Don’t overlook a chance to cook this fantastic soup for your loved ones!
Ingredients
- butternut squash: 1 piece (large)
- onion: 1 piece (small)
- garlic: 5 clove
- yams: 2 piece
- beef stock: 1 cup (or more, chicken stock may be used as well)
- heavy cream: 0.5 cup
- lobster tail: 1 piece (cooked and broken into chunks)
- dill stalks: 4 piece
- olive oil: 3 Tbsp

Peel and chop the squash, yams, garlic and onion first.

Take a large pot and sweat onion and garlic with several drops of oil in it. Cover the pot with the lid and steam the vegetables on low heat until they become soft.

Add chopped yams, squash and chicken stock. Simmer on medium heat for about 40 minutes until the vegetables are well cooked. Let them cool down for about half an hour.

Blend the vegetables to get the puree. Gradually, add cream and keep blending for a while. Then spoon the puree into a pot and simmer it until it becomes hot.

Now, blend oil and dill. Serve with dill oil and lobster. Enjoy!
