I had apples and zucchini that were just begging to be turned into something wonderful! These muffins are moist, dense, and make a delicious snack. Super easy!

Ingredients

  • cooking spray:
  • ¼ cups white sugar: 1 piece
  • oil: 0.66667 cup
  • eggs: 3 piece
  • vanilla extract: 1 Tbsp
  • ¼ cups all-purpose flour: 2 piece
  • ½ tablespoons ground cinnamon: 1 piece (to taste)
  • baking soda: 0.75 tsp
  • baking powder: 0.75 tsp
  • zucchini: 2 cups (shredded)
  • apple: 1 cup (shredded)

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray 24 muffin cups with cooking spray or line with paper liners.

  2. Whisk sugar, oil, eggs, and vanilla extract together in a bowl until smooth. Stir flour, cinnamon, baking soda, and baking powder into sugar mixture just until batter is combined; fold in zucchini and apple.

  3. Spoon batter into the prepared muffin cups, filling each 2/3 full.
