This avocado and feta dip is a chunky, savory summer salsa that tastes great with pita or tortilla chips.

Ingredients

  • plum tomatoes: 2 piece (chopped)
  • ripe avocado - peeled, pitted and: 1 piece (chopped)
  • red onion: 0.25 cup (finely chopped)
  • clove garlic: 1 piece (minced)
  • snipped fresh parsley: 1 Tbsp
  • fresh oregano: 1 Tbsp (chopped)
  • olive oil: 1 Tbsp
  • red or white wine vinegar: 1 Tbsp
  • ounces crumbled feta cheese: 4 piece

  1. In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar, then stir in feta cheese. Cover and chill for 2 to 6 hours.
