This blueberry galette, with its rustic appearance, is fun to make when fresh blueberries are in season. I enjoy the higher crust-to-fruit ratio. Serve with ice cream.

Ingredients

  • ½ cups all-purpose flour: 1 piece
  • cornmeal: 0.5 cup
  • fine salt: 0.5 tsp
  • unsalted butter: 0.5 cup (cubed, cold)
  • ice water: 6 Tbsp (or as needed)
  • blueberries, rinsed and: 1 pound (dried, fresh)
  • white sugar: 0.5 cup
  • lemon juice: 1 Tbsp
  • lemon zest: 2 tsp
  • ½ teaspoons cornstarch: 1 piece
  • egg: 1 piece (beaten)
  • water: 1 tsp
  • demerara sugar: 1 Tbsp

  6. Remove dough from the refrigerator and roll on a lightly floured work surface into a 15-inch circle, about 1/8 inch thick.

  7. Place blueberry filling into the center of the dough, leaving 3 to 4 inches of space around the border of dough.
