A flavorful pasta salad featuring broccolini, bell peppers, red onion, and a zesty dressing made with olive oil and red wine vinegar.
Ingredients
- fusilli pasta: 8 oz
- broccolini: 3 cup (chopped, a mix of florets and stalks)
- red bell pepper: 1 piece (seeded and chopped)
- red onion: 0.5 cup (diced)
- extra-virgin olive oil: 0.5 cup
- red wine vinegar: 0.25 cup
- maple syrup: 1 tsp
- dried parsley: 1 tsp
- dried basil: 0.5 tsp
- salt: 0.25 tsp

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook for 4 to 5 minutes.

Add the broccolini and continue to cook the pasta and broccolini together until the broccolini is blanched and slightly tender and the pasta is al dente, 3 more minutes. Drain and rinse with cold water. Transfer to a large bowl, then add the bell pepper and onion.

In a small bowl, mix together the olive oil, vinegar, maple syrup, parsley, basil, and salt.
