This is a slight twist on the traditional mojito but it makes an incredible summertime cocktail so much better! You can use sparkling wine in place of champagne, if desired. Garnish with a mint sprig.
Ingredients
- mint leaves: 10 piece (fresh)
- white sugar: 2 tsp
- fluid ounces white rum: 2 piece
- lime, quartered: 0.5 piece
- fluid ounces sparkling white wine: 4 piece
- ice: 0.25 cup (crushed)

Place mint leaves and sugar in the bottom of a collins glass. Crush mint using a muddler. Add rum and lime slices to glass and muddle again. Top with sparkling wine and crushed ice.
