Try this recipe for chicken salad with a chipotle kick if you have leftover chicken that you want to use. This is very easy and takes no time at all. I throw it on toasted bread with sliced tomatoes and fresh basil.

- mayonnaise: 1 cup
- crumbled reduced-fat feta cheese: 0.25 cup
- green onions: 2 piece (chopped)
- reduced-fat sour cream: 3 Tbsp
- chipotle peppers in adobo sauce: 3 piece (minced)
- garlic salt and pepper: (to taste)
