This carrot cucumber slaw is easy and fast to make. A new twist that is healthier than a basic slaw.
Ingredients
- cucumbers - quartered, seeded, and: 2 piece (sliced)
- carrots: 2 piece (shredded)
- onion: 0.25 piece (grated)
- white sugar: 2 Tbsp
- ½ teaspoons ground coriander: 1 piece
- kosher salt: 1 tsp
- coarse ground black pepper: 0.5 tsp
- apple cider vinegar: 0.25 cup

Combine cucumbers, carrots, onion, sugar, coriander, salt, and black pepper together in a bowl; add vinegar and mix well.
