- rice: 4 cups (cooked)
- soy sauce: 4 Tbsp
- rice vinegar: 4 tsp
- sesame oil: 4 tsp
- chili oil: 0.25 tsp (optional)
- sashimi-grade salmon, cut into small cubes: 0.75 pound
- avocado: 1 piece (sliced, to taste)
- red bell pepper: 1 piece (sliced, to taste)
- shelled edamame: 0.25 cup (to taste)
- sheets dried seaweed: 4 piece (cut into strips, to taste)
- pickled ginger: 1 Tbsp (to taste)
- furikake (Japanese nori seasoning): 1 Tbsp (to taste)
- green onion: 2 Tbsp (to taste, chopped)
- sesame seeds: 1 Tbsp (to taste)

Divide rice among 4 bowls.

Mix soy sauce, rice vinegar, sesame oil, and chile oil in a bowl to make dressing. Mix salmon with the dressing. Divide among the 4 bowls.

Top bowls with avocado, red bell pepper, edamame, seaweed, pickled ginger, and furikake seasoning. Garnish with chopped green onion a sprinkling of sesame seeds.
