This dorito casserole is slightly reminiscent of chilaquiles and perfect for a weeknight dinner. Have fun customizing the taste by selecting a different dorito flavor.
Ingredients
- lean ground beef: 1 pound
- yellow onion: 1 cup (chopped)
- red bell pepper: 1 cup (chopped)
- (1-ounce) packet taco seasoning: 1 piece
- water: 0.5 cup
- (14.5-ounce) can diced tomatoes and green Chilis (such as RO*TEL®): 1 piece (drained)
- (15-ounce) can black beans: 1 piece (drained and rinsed)
- sour cream, plus more: 1 cup (for serving)
- (9 1/4-ounce) bag nacho cheese or cool ranch Doritos®, lightly crushed (about 5 cups): 1 piece
- Cheddar-Jack cheese: 3 cups (shredded)
- tomato: 1 piece (chopped, to taste)
- fresh cilantro: 2 Tbsp (to taste, chopped)
- salsa: 0.5 cup (to taste)
