Ingredients
- uncooked regular long-grain white rice: 1 cup
- water: 2 cups
- salt: 1 tsp
- olive oil: 1 Tbsp
- onion: 1 piece (chopped)
- garlic: 2 clove (minced)
- bell pepper: 1 piece (diced)
- frozen peas: 1 cup
- ground cumin: 1 tsp
- chili powder: 1 tsp
- parsley or cilantro: (chopped, fresh, optional)

Rinse the uncooked rice in cold water and set aside.

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and minced garlic, and cook until the onion is translucent.

Add the diced bell pepper and frozen peas to the pot and cook for 2-3 minutes.

Add the uncooked rice to the pot and stir well to combine with the veggies.

Add the ground cumin, chili powder, and salt to the pot and stir well.

Add the water to the pot and bring to a boil.

Reduce the heat to low and cover the pot with a lid.

Simmer for 20-25 minutes or until the rice is cooked and all the liquid has been absorbed.

Once the rice is cooked, fluff it with a fork and add fresh parsley or cilantro (if using).

Serve immediately and enjoy your delicious and healthy one-pot rice!

Note: You can add your choice of protein, such as cooked chicken, beef, or shrimp, to this recipe to make it even more filling and nutritious. Just add it in with the veggies in Step 4.
