The salad ingredients came from a cooking class I went to, but the dressing came from a friend. Make sure you use firm mangos or they will be impossible to julienne.

Ingredients

  • firm green mangoes - peeled, pitted, and: 2 piece (cut into matchsticks)
  • purple onion: 0.25 piece (sliced)
  • red bell pepper: 0.25 piece (sliced)
  • sprigs cilantro, or more to taste, leaves removed and stems discarded: 3 piece
  • lime juice: 2 Tbsp
  • fish sauce: 2 Tbsp
  • brown sugar: 1 Tbsp
  • peanuts: 1 Tbsp (crushed)

  1. Mix mangoes, onion, red bell pepper, and cilantro leaves together in a bowl.

  2. Whisk lime juice, fish sauce, and brown sugar together in a separate bowl until the sugar is dissolved; pour over the mango mixture and toss to coat. Top salad with peanuts.
