Stages of cooking
-
Peel feijoa, but don’t throw away the peels. We will need them later. Put the fruit into the bowl with cold water for a while to prevent them from darkening.
-
If your feijoa are too hard, stick them with a sharp fork.
-
Take a pot, add sugar into it and one tablespoon of water. Put the pot on small fire and keep stirring the syrup until it is ready.
-
Take the pot away from fire and carefully add hot boiling water inside. Put feijoa peels into the pot and boil them for about 7 minutes, then strain the sugar syrup.
-
Now, add feijoa fruit and boil them for about 40 minutes on medium fire, stirring the jam. Add cognac into the jam at the end of cooking.
-
As soon as the jam cools down, spoon it into the glass jars and keep them in a fridge. Bon appétit!
