Gooseberry is a healthy and nutritious berry, rich in vitamins and microelements. It helps boost the immune system of adults and kids and it is also very tasty. Keep reading the recipe of this fantastic gooseberry jam and hurry up to cook it the sooner-the better!
Ingredients
- gooseberry: 1 kg
- sugar: 1.2 kg
- water: 500 ml
- cherry leaves: 20 piece
- alcoholic beverage: 50 ml (any you like)

Wash and dry gooseberries. Make sure they are hard and green.

Stick each berry with a toothpick to prevent it from bursting while cooking.

Sprinkle the berries with alcohol and mix them well. Leave in a freezer for 30 minutes. Then place them into a fridge for the night.

Wash cherry leaves.

Put the leaves into the enamel pot and boil for about 10 minutes. Remove the leaves afterwards.

Add 600 g of sugar into the pot with the cherry leaves water and boil the syrup until the sugar dissolves.

Wait until the syrup cools down to 80 C (176 F) and add gooseberries. Leave for about 5 hours. Then strain the syrup, add the rest of sugar and boil the syrup once again. Add gooseberries one more time and leave for 5 more hours. Then keep the jam on small fire until it boils, let it cool down and leave for 5 hours again. Repeat the last step one more time. Don’t forget to carefully stir the berries while boiling the jam.

That’s it! Your gooseberry jam is now ready! If you wish, you can add 1 g of vanillin into it! Spoon the jam into glass jars and keep in a fridge. Enjoy!
