A healthy and tasty chicken salad with a fruity twist - great on a croissant or in a honey pita. Note: This salad is best if eaten the day after preparation. This allows the ingredients time to mingle, giving a fuller flavor. If desired, use nonfat mayonnaise.

Ingredients

  • skinless, boneless chicken breast halves: 4 piece (diced)
  • stalk celery: 1 piece (diced)
  • green onions: 4 piece (chopped)
  • Golden Delicious apple - peeled, cored and: 1 piece (diced)
  • golden raisins: 0.33333 cup
  • seedless green grapes: 0.33333 cup (halved)
  • toasted pecans: 0.5 cup (chopped)
  • ground black pepper: 0.125 tsp
  • curry powder: 0.5 tsp
  • light mayonnaise: 0.75 cup
