This garden salsa is a fresh, easy way to use up your garden tomatoes. Mix and match different varieties of tomatoes for this salsa. It will keep well for several days in the refrigerator.
Ingredients
- sweet onion: 0.5 piece (chopped)
- green bell pepper: 0.5 piece (chopped)
- cilantro: 0.25 cup (fresh)
- slices pickled jalapeno peppers: 5 piece (to taste)
- tomatoes, quartered: 6 piece (fresh)
- olive oil: 2 tsp
- red wine vinegar: 2 tsp
- lime: 0.5 piece (juiced)
- salt: 0.125 tsp

Place onion, bell pepper, cilantro, and jalapeño peppers into a food processor. Pulse until finely chopped. Add tomatoes; pulse a few times until tomatoes are coarsely chopped. Transfer to a bowl with a tight-fitting lid.
