This garden salsa is a fresh, easy way to use up your garden tomatoes. Mix and match different varieties of tomatoes for this salsa. It will keep well for several days in the refrigerator.

Ingredients

  • sweet onion: 0.5 piece (chopped)
  • green bell pepper: 0.5 piece (chopped)
  • cilantro: 0.25 cup (fresh)
  • slices pickled jalapeno peppers: 5 piece (to taste)
  • tomatoes, quartered: 6 piece (fresh)
  • olive oil: 2 tsp
  • red wine vinegar: 2 tsp
  • lime: 0.5 piece (juiced)
  • salt: 0.125 tsp

  1. Place onion, bell pepper, cilantro, and jalapeño peppers into a food processor. Pulse until finely chopped. Add tomatoes; pulse a few times until tomatoes are coarsely chopped. Transfer to a bowl with a tight-fitting lid.

  2. Whisk together olive oil, red wine vinegar, lime juice, and salt in a small bowl until dressing is well combined.
