This easy and delicious salad with Granny Smith apples, feta, and walnuts is always a hit.
Ingredients
- mixed salad greens such as leaf lettuce, endive, and radicchio: 4 cups
- Granny Smith apple: 1 piece (cubed)
- walnuts: 0.5 cup (chopped)
- crumbled feta cheese: 0.5 cup
- cranberries: 0.5 cup (dried)
- green onions: 2 Tbsp (finely chopped, optional)
- vegetable oil: 0.25 cup
- blueberries: 0.25 cup
- extra-virgin olive oil: 2 Tbsp
- balsamic vinegar: 2 Tbsp
- salt: 0.25 tsp
