This easy Mexican guacamole with corn (guacamole con elote) and tomatoes tastes great with corn chips. As with all guacamole recipes, make sure you are using ripe avocados. [Recipe originally submitted to Allrecipes.com.mx]

Ingredients

  • avocados - peeled, pitted, and: 3 piece (mashed)
  • lime: 1 piece (juiced)
  • salt: (to taste)
  • plum tomato: 1 piece (chopped)
  • white onion: 0.5 piece (chopped)
  • serrano Chili, seeded and: 1 piece (chopped)
  • fresh cilantro: 2 Tbsp (chopped)
  • olive oil: 1 Tbsp
  • whole kernel corn: 1 can (8.75 ounce can, drained and rinsed)

  1. Mash avocados, lime juice, and salt together in a medium bowl. Mix in tomato, onion, serrano chile, and olive oil. Stir in corn kernels. Serve immediately.
