This was given to me by a friend years ago. I have since tweaked it to my liking and think you will like it also. I have eaten it many times with fried tilapia. I call them Hawaiian hush puppies because that's what they remind me of with the pineapples and slight sweetness.
Ingredients
- oil for deep frying:
- cream-style corn: 1 can (15 ounce can, drained)
- pineapple: 1 can (15 ounce can, drained, crushed)
- cornmeal: 2 cups
- self-rising flour: 1 cup
- cheddar cheese: 1 cup (shredded)
- onion: 0.5 cup (minced)
- white sugar: 0.5 cup
- eggs: 2 piece (beaten)
- pinch salt and ground black pepper: 1 piece (to taste)

Heat oil in a deep fryer or large saucepan to 365 degrees F (185 degrees C).

Mix canned corn, pineapple, cornmeal, flour, Cheddar cheese, onion, sugar, eggs, salt, and pepper together in a large bowl.

Drop as many teaspoonfuls of batter into the hot oil that the pan will allow; cook until golden brown or until they float to the top, about 5 minutes. Drain on a paper towel-lined plate. Repeat with any remaining batter.
